I'm gonna name a wrestler, and then you have to give me what you would believe to be their career-defining moment. Then you get to name the next wrestler, and so on and so forth...
EG: If the person before me had said "Eddie Guerrero", I would probably say his win over Brock Lesnar at No Way Out 2004 would be his career defining moment. It solidified him as a true player on Smackdown, the crowd's reaction and the celebration afterwards not only showed how over Eddie was, but it restored my faith in wrestling - a lot of title wins seem hollow these days, but that felt genuine. It felt great watching my guy finally get the dues he deserved. It also showed that Vince had true faith in Eddie's recovery from drug abuse, and showed he had truly turned his life around..
And now I say: Triple H

Marrying Stephanie and becoming her man bitch.
But in "wrasslin" terms, I'm torn between two.
The first was that he had a comparable star (someone with an even bigger star) in The Rock to both have great matches with and also to counterbalance his own rise.
The other was his feud with Mick Foley which "sealed the deal" in terms of making him a bona fide main eventer. It's hard to remember but before that feud people were very unwilling to accept him as a genuine Champion.
Next up....
Bret Hart

Doink's feud with Bam Bam Bigelow & Luna Vachon when Dink got splashed was quite memorable. Aswell as when there were multiple Doinks to contend with when you fought him haha.
Personally it was his ladder match with Razor Ramon at WrestleMania X, it's when I first became a fan.
To most it was his win over Bret Hart in their Iron Man match at WrestleMania XII.
Sting

What made Sting a star was his time limit draw with champion Ric Flair at the Clash of the Champions..
Stone Cold Steve Austin.
When he started acting like a badass or more specifically, the first time he said "Austin 3:16 says I just whooped your ass!"
Hulk Hogan.
