Great topic - we should all get to be fanboys/girls once in a while! I like most of ones mentioned above - especially the gothic stuff like Gangrel/Brood, Kane's old entrance (the one with singing sucks), and of course, Undertaker's entrance. Here's a few honorable mentions that I have not seen mentioned yet...

The Nation especially The Rock's version, I like that better than his current version
Quebeccers damn straight!!!
Booker T, especially the Harlem Heat version. His current one is cool, but the one he sang (lol) was horrible
Razor Ramon I was a huge Razor mark. And his music, while cheesy now, was my favorite WWF tune as a kid
Mr. Perfect Don't ask me why, but I've always loved that music for his entrance.
Val Venis It's gotta be the best entrance video ever!

Ro6ue is the European Champion
The old WCW version of the nWo entrance, it seemed to interrupt the show and the announcers.........sweeeeeeeeet
Stone Cold's just because of the huge crowd response each time
'Deadman' Undertaker's live is pretty ominous
Y2J of course...personally I think that's the loudest pyro of any entrance today. It shakes the building!
I really liked the Evolution entrance when Orton was still a member and they'd all come down wearing suits...classy and sophisticated.....Neo-Horsemen
Goldberg's entrance from the back through the pyro and breathing smoke is pretty impressive too.
And of course, the Nature Boy Ric Flair.....even at 50something he's still the man...wooooo

also on a production note nWo and goldust`s shattered dreams were pretty spectacular. DX with the cross pyro`s was cool too

I would have to go with

1. Y2J (original) - the countdown was awesome, heck, it still is
2. Matt Hardy V1 b/c Matt Facts are awesome and MH is totally under-rated
3. Rock (Hollywood) - nothing says arrogance like a long entrance w/ a slow sauntre to the ring - you go Rock
4. Undertaker (Ministry - Druids) - this use to creep me out
5. Stone Cold - the glass breaking, gets you pumped everytime
