I'd like to of seen a Randy Couture in his actual prime fighting Brock Lesnar. I thought he looked appalling and got dominated, a Couture 5/10 years ago would've been okay.
Watch Tito Ortiz v Ken Shamrock. Any of the 3 were pure gold. Couture v Ortiz (this was the Couture i would've liked to of seen v Lesnar) Anderson Silva v Dan Henderson, Brock Lesnar v Frank Mir 2.
Any of those are good solid fights, the best fights in MMA are between 2002-2004 time for me, but normally any top fight between 2 top competitors is a guaranteed fight to watch.
The Tito/Shamrock fights were so boring everyone knew Tito would kick his ass sure TUF 3 built up some great hype but shitty fights. If you didn't know hte history no one would give a shit.
Hendo / Silva was sooooo boring a decent 2 minute ass kicking by Silva in the second round was the only good thing.
I think Fedor vs Nog, Nog vs Bob Sapp like seriously getting powerbombed then armbar.
Also Wandy vs Chuck was awesome.

That is quite funny because Forrest vs. Bonnar was as good an example as I can think of, of two guys beating the hell out of eachother. I'm not saying that's a bad thing because it was definitely one of the best fights that I have ever seen.

Forrest Griffin vs. Stephen Bonnar 1 - TUF Finale - Well, of course I have to start off with the fight that launched MMA into new heights. The funny thing is, this was a very sloppy fight and showed very poor technique. However, they both went straight forward the entire fight and beat the hell out of each other which made for a very entertaining fight. That event brought in so many new viewers from TUF and a main event brawl(in every sense of the word) was the best thing that could of happened. It wasn't one of those great fights that you had to be a knowledgeable MMA fan to truly understand everything that was going on, it was a pure simple fight.
Fedor Emelianenko vs. Antonio Rodrigo Nogueira I - Basically the changing of the guard from the best heavyweight in the world at the time(Big Nog) to the future greatest heavyweight of all time in Fedor. Coming into that fight Nog was considered unbeatable on the ground and everyone thought it was be suicide for Fedor to take him to the ground. Fedor took him to the ground and beat him up with vicious ground and pound for the entire fight.
Fedor Emelianenko vs. Mirko Cro Cop - Coming into this fight Fedor was without a doubt the best heavyweight in the world. Mirko Cro Cop was a knock out machine in his prime that was considered the 2nd best heavyweight in the world at the time. Mirko was on a seven fight win streak in PRIDE including a head kick KO of Fedor's brother. Was all around a great fight in which Fedor showed his dominance of the world of MMA once again.
Antonio Rodrigo Nogueira vs. Bob Sapp - Basically what Suffy said. Bob Sapp came into this fight as 350 pounds of muscle fighting against a much smaller Big Nog. Sapp threw the PRIDE heavyweight champ around like he was nothing for most of the fight. It was one of the MANY fights that showed why Big Nog has the biggest heart in MMA history. Big Nog survived the trashing and eventually caught Sapp in an armbar when he gassed.
Mauricio "Shogun" Rua vs. Antonio Rogerio Nogueira - Simply put, very fucking entertaining. A high paced, high action fight between two of the best light heavyweight in the world, especially at the time. If you think Rua's conditioning was a problem before the knee injuries then you are very wrong and this fight is the perfect example.
TE's honorable mentions - Chuck Liddell vs. Wanderlei Silva, Frank Trigg vs. Matt Hughes II, Big Nog vs. Fedor III, Kevin Randleman vs. Fedor, Frank Shamrock vs. Tito Ortiz, and Matt Hughes vs. BJ Penn 2.
