My concern isn't the graphics. Its the controls. The control system is going to make or break the game far more than the graphics will, I think. The controls are sloppy or weak, or even just generic, its going to make the game somewhere between boring and unplayable. Great controls can cover graphic issues, but great graphics won't make up for bad controls, in my experience.
The controls should be pretty good, they make a whole new engine on it so it's different than the SD v. Raw games. Plus they have been working on it for a pretty long time, so there is really no excuse for crap controls.

The controls should be pretty good, they make a whole new engine on it so it's different than the SD v. Raw games. Plus they have been working on it for a pretty long time, so there is really no excuse for crap controls.
I would expect the controls to be solid. Like you said, no excuse for them to be crap. But it wouldn't be the first time a game developer to forget to spend much time on something vital.
What I really want to see is controls that are individual to fighters. Which isn't to say each fighter has to have individualized controls and moves, but the big names should. And different styles of fighters should feel different to control. So trying to kickbox using a guy who's only skills are wrestling shouldn't work very well. And using Anderson Silva shouldn't be the same control-wise as BJ Penn.
I will agree on the control scheme. I hope it's not so easy as UFC Sudden Impact (which the controls for the basic stuff and most effective combos were so easy that a 3 year old could pick it up and figure out how to win a fight, but I hope it's not as hard as the SvR games have become lately. And yes, the gameplay is supposed to look exactly like that. They had Rampage and Forrest test it out, and it looks freakin awesome.
