So if you had to make a gimmick match what would it be?
Mine, assuming the WWE is back in 1998, is a Hell in a Cell with Last Man Standing Rules. Or throw a casket in there and have Casket match rules in there.
May seem like a marky poste, but try not to think what would make a 'good wrestling match', think more cool, and out there.

The problem with coming up with new gimmick matches is that everything has been done. So you're left with either combining gimmicks (Like you have done) or just modifying previous ones (Ultimate X coming from ladder matches).
It's probably been done in some fashion, but I'd love to see a long elimination match where after each time someone is eliminated, the rules changes. Maybe start with something large like a 22 man battle royal. Once the ring is down to 12 men, you split them up for a huge 12 man tag. The team that loses is gone and only 6 man remain. Maybe have some sort of huge bar room brawl/last man standing where the first two who can't answer a 10 count are eliminated (Obviously, several refs will be there.) The final 4 are paired off and we get a tag team cage match. The first team that gets both men out over the cage and to the floor first advances to the final round. The final round would be anything goes 15 minute iron man match. The man who wins the most falls at the end gets a World Title shot (Or even the belt) while the loser is fired.
It would probably go down as one of the most memorable Wrestlecrap ideas ever, but the winner would at least be seen as he deserved the title shot (Or title).

Good gimmick matches died after Ultimate X. Now people are just struggling to stay original, and as Jim said, combine gimmicks or put in goofy rules into it like King of the Mountain or Reverse Battle Royals or ladder cages or whatever.
If only there was a 'Kill Vince Russo with a pole' match, we'd be fine without ridiculos finishes and stipulations.

While I was in my last e-fed, I won the right to decide what match I would defend my title in, and I chose a match called the "Ultimate Destruction" (self-named). It combines a Hell in a Cell with a standard cage and ladder. The two wrestlers start outside the ring - at opposite ends of the HIAC - and the object is to climb the steel cage to enter the ring and then ultimately climb the ladder and grab the title (which is hanging down from the top of the HIAC).
I know it sounds pretty confusing, so I hope I described it well. But, it was a pretty decent match (in my opinion). I think it would be interesting to see how that would go over in a current promotion.

It starts out as a three way tag match until someone gets pinned. Once that happens, whoever gets pinned goes to a penalty box at ringside. A ladder match would start. The person in the penalty box would remain there until someone else would get pinned. Thus making it so one team is always at a disadvantage during the ladder match.

This came up in another forum recently, and both my ideas were run down. Let's see if I get a more positive reaction here:
I should preface this by saying I thought of these when I was alot younger.
-Platform Match. Basically, two platforms are elevated above opposite turnbuckles. They exist purely for highspots. In hindsight, this is probably a really crappy idea.
-No Ring Match. Okay, it's a No DQ match, where you aren't allowed to fight IN the ring. You can fight outside it, on the apron, and use the turnbuckles, but not inside the ring itself.
As far as combining gimmicks goes....
-Ironman Tables Match
-2/3 Last Man Standing Match
