This idea came to mind with the announcement of the Undertaker/Punk match for Breaking Point, and the evolution of CM Punk's heel persona over the last few weeks. It got me thinking about how many people wanted to see a CM Punk heel turn, and the straight edge "better than you" heel persona in WWE, and how the fact that he is cutting these promos seems like fatasy booking.
Basically, can you think of times in wrestling history when you have marked hard simply because something happens that you had always wanted to see, but didn't think you ever would?

The ending of Wrestlemania 20 springs to mind instantly...
Definitely. That's pretty much the definition of this. Truly epic moment a lot of people thought they'd never see.
Although you could argue that the build to the match itself was simplistic or even lazy, a recent example for me would be the Michaels/Taker Wrestlemania match. Even right up until the match was announced, I thought WWE might ruin it and give us Taker/Kozlov or something, which would just have been a huge disappointment after teasing Taker/HBK. There were even rumours of a triple threat. Once the match was actually announced, I stared at the preview for a few moments on wwe.com to make sure it was actually there.
Yes, "OMG ITS THESE TWO AGAINST EACH OTHER... AT WRESTLEMANIA !!!!!"

The Undertaker returning as the deadman. I know it may have been obvious he'd do it at some point but I wasn't very "smart" to the business and had been hoping for 4 years he'd go back to the deadman. I liked the biker but it wasn't the same. Seeing it actually happen in such a big way was pretty awesome.
Flair's goodbye angle was something we'll probably never see again and was such a big deal it seems like it couldn't have been in this era.

It's not really booking, but can I just say Danielson to the WWE?
As far as matches go, I'd have to say Kurt Angle vs. Samoa Joe even though it was kind of a dissapointment. Both men were huge deals at the time, especially Joe, who was taking off like a rocket to the moon.
