I have heard this guy described as one of the best US workers of a generation. To be honest I have only seen his TNA work, and even then, I don't think I've seen much of it. Basically what I'm asking is for Low Ki fans to come in here and explain what is so great about him, while also recommending some of his very best matches that I should check out.
Jim and Steve, I'm looking at you.

Any and all of his 2002 ROH matches are worth your time, heck I think he may have peeked in 2002 he was so good then. Rumage through the indy media forum, Jim just posted the Fight Without Honor against Joe which is just fucking great. It's just an amazingly brutal, stiff war with Ki trying to take the big man down. There's also the obvious match with Danielson from Round Robin Challenge which is a really good mat-based match and it's really focused too with Ki attacking Danielson's injured eye.
Just pick up most Ki matches you can find because they are pretty much all good. Ki has many aspects about him which are great. He's amazingly intense like Benoit was and it really creates the feeling of "these guys are really going at it" in a match. He's also great on the mat too and he's one of the best strikers going and works nice and stiff. On top of that he's also an extremely smart and versatile worker like Danielson and he seems to wrestle each opponent differently. He'll wrestle someone like Danielson on the mat, he'll wrestle someone like KENTA by beating them up and he'll wrestle someone like Kobashi by using his speed. He's also carried some really great matches too, he had a GHC Jr title match against Kanemaru which turned out really damn great and it was because Ki was carrying his lazy opponent through the match.
Also watch last year's BOLA finals against Hero, best match from PWG I've ever seen and Ki is pretty great in that too.

Pretty much everything from 2002 was great as he was arguably ROH's main guy. But you should also check out vs. Austin Aries at The Future is Now, vs. Jay Lethal & Samoa Joe at Manhattan Mayhem, and vs. KENTA at Final Battle 2005.

His stuff at FCW's been excellent, he really delivered in 2 main events against TJ Wilson and Harry Smith.
Unfortunately, he's out with a knee injury at the minute. On the plus side though, FCW don't have him wrestling a WWE style, so it's looking good that he'll keep his uniqueness when he gets called up

Also check out any of his early TNA work (As Low-Ki, not lame ass Senshi). There was a time when I would say no one came close to being as good of a worker as Ki (That includes Dragon).

As metioned before, check out his early TNA work, and I would advise you to watch his match with T.J Wilson (Tyson Kid) in FCW. It's on youtube so you have no excuse not to watch it.

He probably sits among the top of the "In-ring intensity" heap. He has an ability to make me forget about how small he is by showing unrivalled aggression.
It's not a matter of going "Wow, maybe this is real?" because you can tell [esp. Early ROH work] that he is out and out smashing fucking heads left, right and centre.
Pleasure to have seen this guy live numerous times, major fan of this cat.
2001 was a really good year for him as well, I don't know if you have access to JAPW somehow, but his JAPW matches against Homicide, and Xavier were really good. You Tube has a match from JAPW where he defends against both Homicide, and Xavier. Pretty good matches with Red too. He had a match against Spanky (THE Brian Kendrick or Leonardo Spanky, for you Zero-1 fans out there) in Zero-1 that was excellent, as well as a title defense against A.J. Styles in Japan that was phenominal (pardon the pun).
I agree though that his intensity and implied stiffness makes you sometimes forget how small he really is.
His Mortal Kombat-esque theme song just added to his sheer awesomeness.
