Just watched Edge vs HBK from the Rumble and didn't think it was anything special. Decent match with some very good heel work from Edge and some nice spots such as the spear on the outside, and some pretty cool counters, but in general I felt it was just your standard PPV match, and the finish really brought it down for me. I don't mind "grabbing the ropes" finishes, but when it's that unbelievable that the ref would have missed it, it's pretty annoying. The whole thing was pretty sloppily done. Another of my wrestling pet-hates is the heel walking away from the ring without even glancing over the shoulder. Seriously, as if you'd do that.
Decent, but won't make my list. I'd probably only go ***.

Edge & Christian vs Randy Orton & Shawn Michaels from a RAW in early '05 sticks out as one in my mind. Haven't watched it in a good while, but I remember enjoying it a lot.

Rewatched Regal/Benoit from Velocity and from NM '06, and both have a good chance of getting on the back on my list, but I think I prefer the Velocity match. It's not as out-right violent (though in both matches regal gets hardway'd with a headbutt), but the struggle for control at the start is better, it goes longer and it has better counter/chain wrestling. And the fact it happened on Velocity also has some appeal.
Does anyone know when abouts the London/Yang matches happened?

Benjamin vs Jericho is a heck of an opener. Maybe second only to Rey/Angle. Great Jericho performance as he acted like a dick and constantly forced Benjamin to get more aggressive throughout. Some pretty neat spots like, well, I won't spoil them but they're good. Thought the 2.9 roll-up finishing stretch was also really well done.

Watched this earlier. It is indeed a very good opener, but I don't think it was a great match by any means. Jericho as a dick was definitely ftw, and Benjamin was very enjoyable here as well, but as good as it was, I wouldn't consider it list-worthy.

Just rewatched the Money in the Bank match from Wrestlemania 21. I think this one will make my list. Unlike some future MITB ladder matches, it had the right number of guys and the perfect mix of guys. Everybody in the match served a purpose and made the match work. You had Kane as the powerhouse, Christian and Edge as sneaky heels who were ladder match veterans, Jericho as the guy who came up with the match, who also has great experience in ladder matches, Shelton as the athletic up and comer who will pull out some ridiculous spots in order to win a shot at the title, and last but certainly not least, the determined, gutsy Benoit, who came so close to winning despite the injured arm (which was brilliantly sold). I love the spot when he hits the diving headbutt on Kane and starts bleeding from the head. Basically showed he was willing to do anything for a shot at the World Title. The finish was great and made Edge look a total dick, as well as making Benoit look great.
Oh and yeah some of the Shelton spots were insane. The spot when he runs up the ladder to clothesline Jericho is one of the coolest things I've seen in a ladder match. I don't mind spotfests as long as the spots are innovative and entertaining, although obviously this match was a lot more than just a spotfest, as it told a great story.
