There were a few very memorable TV matches from this year that spring to mind, most notably the Power Trip vs Benoit/Jericho, which is praised to this day, as well as being notable for the Triple H quad injury. Jericho and Benoit as a team was awesome. Benoit vs Austin was another great one. I watched it fairly recently and it was definitely one of the best TV matches I've seen.
As for PPV stuff, this was the year that saw in my opinion the best WWE PPV ever in Wrestlemania 25, and before the whole Invasion stuff kicked in the company in general was producing some pretty great stuff on PPV, particularly the first quarter.
Royal Rumble saw the amazing Rumble match, which gets my vote for the most exciting and best Rumble match ever, with countless memorable moments, surprises entrants, returns etc. The Rock/Austin staredown was brilliant, and the whole story of Austin gutting it out despite Triple H's attack was hugely enjoyable. I also loved Kane's run in the match, and Show's return. This was just brilliant for the most part. Sure there were a few boring sections near the stat, but in general, great.
The Jericho/Benoit ladder match was also pretty fantastic. So many innovative spots and the ladder being used as a weapon. It avoided being a spotfest as most other ladder matches are. Great work by these two and a very good feud ender.
At No Way Out we saw not only a very good Rock/Angle match, but one of the best WWE matches I have had the pleasure of seeing in Triple H vs Austin, a gruelling and brutal 3 stages of hell match which really did everything it aimed to do and provided a great end to their epic feud.
Then came Wrestlemania, and I'd say Rock/Austin is the best Mania main event ever. I'd give both that and the NWO 3 stages of hell match 5*. Other Wrestlemania highlights include the great Angle/Benoit match (which is admittedly WAY worse than the Rumble 03 one) and TLC 2, which was one of the best spotfests ever.

I would not be at all surprised if Jericho/Benoit vs Austin/HHH turned out to be my #1 tag match. As far as story-telling goes it was off the charts.
I could say off the bat Rock/Austin is a top 5 match, easily.
You forgot Austin vs Angle too. The Summerslam match was epic as allllll fuck and had maybe the best screwjob finish ever. The Unforgiven and RAW matches were also great stuff. I also really like Angle/Shane from KOTR, TLC III with the Benoit injury angle, Rock/Jericho from No Mercy.
I'll probably rummage through the media forum and youtube and post a bunch of links later.
I think Austin could have a tonne of matches worth considering from one year alone.

lol I didn't forget it, I just stopped after Mania.
Angle vs Austin was brilliant indeed.
And yeah, Angle vs Shane from KOTR is one of my very favourite brawls ever. Call it a carry, but it's unbelievable that a non wrestler can be involved in a match that good. Sure it was partly good because of Shane getting thrown around, but still. The glass spot is one of my fav spots ever, and the botched helped it.

Chris Jericho vs Rob Van dam at Unforgiven was one of the most enjoyable hardcore matches in the WWE in this era, also I'm suprised The Undertaker vs Triple H match from Mania hasnt been mentioned, the best match these two ever had with each other.
EDIT Also an hidden gem is Rhyno vs Raven in an hardcore match at Backlash.

I'm clearing all my downloaded music off my PC tonight and once I've got rid of it all, I'm gonna start DLing and wathcing all of this matches that I don't remember... Rhyno vs Raven was fun, but really can't be considered a great match in any way, shape or form imo.

It's usually all or nothing with me. With wrestling, it's generally all. I'd rather watching a good wrestling match than do pretty much anything else... There are obvious exception to that rule though.
