Not to be a dick, but the UFC thing sounds kind of dumb. Unless you mean just having a regular wrestling promotion with angles and typical wrestling stuff just with different singles match rules. (IE Rounds). If so, that is something that has been used in an old promotion that I think was called something like Catch Wrestling. It'd work so long as you explained the matches well enough that it incorporated some type of psychology into the rounds.
WWE 2009 is done to death, I'm one of the culprits. There are already two fairly long running BTB's doing a WWE 2009 scenario (one being mine, the other being Internet God's.) Also it seems that every week somebody tries to start up a WWE 2009 BTB and ultimately loses interest and fails. If your heart is into it and you have some awesome ideas for stories by all means go for it, but the idea in general seems to be over saturated.
The last idea is the one I'd elect out of the three. Somebody has currently started one, the name escapes me off the top of my head but he is doing a very good job of building hype. I think the whole idea of trying to piece together a third 2009 national promotion out of current free agents is great.
